Südback: Clever solutions for your success
Unusual ranges of products, particular quality, outstanding taste: Artisan bakeries are facing true challenges in the competition for customers. WP World of Taste demonstrated at the Südback, how these challenges can be mastered with flying colors. Clever solutions were presented at the always well frequented trade fair stand.
Spelt ciabatta, Engadiner, baguettes, flutes, slit rolls and rose rolls: six products on a single system. With this promise, the live baking generated keen interest. Different highly demanding soft dough was processed on a single roll baking system. This is exceptional! However, the innovative PANE is able to produce the most diverse round and square products, thus providing medium-sized branch stores with the opportunity to offer a wider variety of products in an economic manner.
Improved structure of crumb and crust, more freshness and crispness: the visitors convinced themselves of the many benefits of vacuum conditioning with the WP VACUSPEED® Words were unnecessary. Simply cutting open vacuum-treated and non-vacuum-treated bakery items sufficed. The visual comparison spoke for itself. Not visible at first glance, but equally advantageous: Baking times during ongoing operations can be reduced by more than 30 % with the WP VACUSPEED®. This saves time and energy, and becomes evident in significantly reduced operating costs.
The expanded product range of the WP VACUSPEED® was presented as another novelty at the Südback. This included the new program-controlled sliding door for the manual and semi-automatic process. In addition, the offering in the industrial sector was further expanded with the VACUSPEED® concept in conjunction with the high performance loading of the WP OBER® series, available for the WP MATADOR® deck oven lines and the tunnel and multi-deck ovens.
